Located on Dickson Road in the quirky Wanderlust hotel, WINEDERLUST is a new cellar door concept by Unlisted Collection:, and a purveyor of over 300 labels of wines from boutique wineries.
The casual 60-seater wine and bistro bar redefines an approachable concept to the charming world of wines. WINEDERLUST strives to explore the synergic combination of fine wine and good food to create a seamless, enjoyable and inviting dining experience at friendly prices for wine lovers.
WINEDERLUST showcases wines sourced directly from wineries all over the world, including the established and popular regions like The New & Old World. Guests with a more adventurous palate can look forward to tipples from relatively unknown regions such as, Uruguay, Japan and Morocco. These wines have unique taste profiles and are brought in to WINEDERLUST in limited quantities. Guests can also discover the wine bar’s collection of wines made from rare grape varieties such as, Albillo and Orange, unravel unconventional and exotic wines, and sample wines that are organic and biodynamic. A bottle of wine at WINEDERLUST ranges from $35 to $250.
SPACE, FOOD & RETAIL
With rustic brick walls and a playlist of rock music genre, WINEDERLUST exudes a laidback and grunge vibe that is non-pretentious and welcoming. A massive chalkboard sits in the middle of the bar stating the daily specials and the drinking experience is completed with a kitchen that serves honest bistro food crafted to complement the bar’s collection of wines. Walk-ins are also welcomed for guests who would like to purchase wines off the shelves.
Initiated by Amir Solay, Group Wine & Beverage Manager, WINEDERLUST also presents a “Young Chef Movement” programme where the bistro bar collaborates with young local chefs and winery chefs from Australia and New Zealand to showcase the chefs’ creativity with menus specially created for WINEDERLUST.
Amir Solay, Group Wine & Beverage Manager, senior sommelier of the Singapore scene, and the brainchild of Winederlust, was one of the first to obtain a Higher Certificate in wines and spirits (WSET, UK), and the first 13th Certified Sommelier by the Court of Masters Sommelier in Asia. He forges close relationships with wineries, merchants and distillers globally and obtains small quality batches from their private collection that are often unavailable in Singapore.
